These are definitely my favorite cookies. I remember as a kid, nobody liked Almond Joy. When nobody would take them, I would. Almond Joys are actually, especially the sweet coconut.
Almond Joy cookies are definitely delicious, especially if Almonds Joys are good. This satisfies my chocaholic cravings, and a pinch of coconut definitely helps with the flavor.
Course eating Almond Joys is like drinking Dr. Pepper. Many people say it tastes like medicine. But for me it’s great. Just like drinking Mountain Dew, (Do the Dew).
I guess my tastes are just cultured, and require an acquired taste. The acquired taste definitely comes with age and experience. Without further delay, let’s check out the recipe. See below
2 Squares unsweetened chocolate
1 cn Sweetened, condensed milk
3 c Sweetened, flaked coconut
1 ts Vanilla extract
pn Salt
Almonds for garnish
Heat in a double boiler, 1 can sweetened condensed milk and 2 squares of unsweetened chocolate, until chocolate is melted. Stir until mixture is smooth. Pour over a bowl containing 3 cup of sweetened, flaked coconut. Add 1 tsp of vanilla extract and a pinch of salt. Mix well until coconut is completed coated. Drop on a cookie sheet which is line with parchment paper, by tspfuls. Press a whole almond into the top.
Bake at 350 degrees F. for 10 to 12 minutes. Check at 8 minutes, as bottoms of cookies brown quickly. Remove from oven, cool, remove from pan.
