My late husband Tom was a chocolate fanatic, he researched chocolate in depth. Chocolate Covered Fondant was a topic he researched. There are many uses of fondants and chocolate. In its liquid form it may be poured into molds, or over cakes and pastries as a form of icing. In an intermediate stage between liquid and solid, fondant may be rolled or molded.
Fondants can be used
- to make cream filled with chocolates and elaborate cake decoration.
- to make a flat base for a wedding cake
- as a substituted for chocolate as a covering on candies.
- as a mock white chocolate or a mixture of cocoa and fondant can be made to look like mock chocolate.
- as a dip for cherries, and fruits etc. If these fruits are dipped in chocolate fondant it solidifies to form an outer hard shell.
There are many more recipes with chocolate fondant. These are only a few example uses of chocolate fondant.
How is fondant made? The simplest form of fondant can be made by cooking sugar and water. It is then cooled slightly, and stirred or beaten until it is an opaque mass of creamy consistency. Usually glucose is added to prevent it from graining while cooking. Corn syrup is the most commonly used form of glucose. The fondant usually solidifies after it cools, but it can be liquefied with heating. Fondant chocolate has become the standard for modern, high-quality chocolate because it is extremely smooth and palatable.

Tomorrow is Thanksgiving, we are going celebrate it at my sister’s house this year. This year is her turn to cook the turkey. We prepared the Thanksgiving feast last year. After Thanksgiving day is Black Friday.
We are going to wait in line at 5 in the morning to get a jump on the best bargains and deals. In fact, we are getting late start on Christmas shopping. In the past we started our Christmas shopping after Halloween. My sister and I are planning to go. My niece, and nephew are going to babysit while we go shopping.
In fact, I need to buy gifts for my boss, my co-workers in the office. I also need to buy for my kids, my nephew, and my niece. So I have plenty to do and little time to do it.
I am planning to get a box of Hershey’s Christmas chocolates for my boss. For my co-workers George, and Cindy, I am giving them each a box of Godiva Chocolates Holiday edition. For each of the members in my bookclub, I am going to purchase a large chocolate cake, and so they can sample it at the end of last meeting of the year. For my sister, she get is getting a chocolate gift basket. For my son, I am going to get him a delectable chocolate laptop; the edible kind. Finally for my daughter, she been begging me to get a dog. I’ll surprise her with a chocolate lab.
Last but not least, for my niece and nephew, I need to get them something special. I just don’t know yet. If any of my readers have any suggestions, please leave it in the comments.

This is the first time we are decorating this year without my dear husband Tom. In the past, he designed the outdoor Christmas decorations. It was an elaborate affair. He would take weeks preparing, designing the extravagant light show, and ornaments. He always designed Christmas theme with a chocolate flavor.
We always had the best, and brightest Christmas lights on our block. This year we started the planning, and purchasing late, because, I am a single parent now, and it’s hard being the mother, and the father. We just don’t have the time like we used to.
This year we are looking for some Christmas lights that durable, and weather proof. It’s definitely a bonus when the LED Christmas lights last a long time, and are energy efficient. The great thing about these LED Mini Lights are, they are extremely durable, you can stack boxes, and boxes of lights on top of each other, and the bulbs won’t break. This is especially good when my kids are putting up the lights; you don’t have to worry about broken class.
What we are preparing this year is a food theme. We are going to have Santa Claus, Mrs. Claus, and his elves prepare a Christmas feast, with the dessert being a Christmas chocolate cake. For beverages, we are going to have hot chocolate for the elves, and chocolate wine for the Mr. and Mrs. Claus. Wish us luck with our Christmas decorations.
