1.0 Light Chocolate Chip Cookies
A. Ingredients:

• 2-1/4 cups all purpose flour
• 1 tsp. baking soda
• 2 Tbsps. unsalted butter, softened
• 3/4 cup brown sugar, packed
• 1 tsp. real vanilla extract
• 4 egg (whites)
• 1/2 cup Splenda®
• 1/3 cup light corn syrup
• 3/4 cup flaked coconut
• 2/3 cup almonds, toasted and chopped
• 1-1/4 cups semisweet chocolate chips
• nonstick cooking spray

1. Combine flour and baking soda in a bowl.
2. Cream together next 3 ingredients in another bowl.
3. Beat egg whites in another bowl until foamy.
4. Gradually add Splenda® and then corn syrup.
5. Combine foamy egg white mixture with brown sugar mixture and mix well.
6. Gradually stir in dry mixture, then add last 3 ingredients. Preheat oven to temperature 375°F.
7. Coat cookie sheets with nonstick cooking spray and drop dough by heaping teaspoons, spacing them at least 1 inch apart.
8. Bake 7-9 minutes or until golden brown.
9. Cool 5 minutes before transferring cookies to cooling racks. Cool completely.
